These are DIVINE little morsels of HEAVEN packed with fiber and other nutrients! What you need:
1cupnatural smooth peanut butter
2tbsppure maple syrup
8ozsemi-sweet chocolate62% cocoa or higher, chopped
2 tspextra virgin coconut oil
Why they ROCK: Using dark chocolate with the highest levels of cacao leads the nutritional content of each ball is elevated with more antioxidants, calcium, iron, magnesium. Additionally, coconut oil and coconut flour are packed with fiber and healthy fats! Choosing WISE ingredients to create your favorite foods doesn't mean you're dieting or compromising on flavor - it simply means you're getting the most bang for your BUCK when it comes to your health and wellness! These should be consumed in moderation :) 1 Ball is equivalent to one serving of carbs + 1 healthy fat in your daily nutritional value.
What you do:
Lay out 24 small cupcake liners
Combine peanut butter, cornstarch, coconut flour & maple syrup in a bowl; stir until mixture forms into a dough like texture.
Using clean hands, shape dough into twenty-four 1-inch balls; place a toothpick in the centre of each ball. Place each ball in a cupcake liner and stick in the fridge for 20 minutes.
Fill small saucepan with 2 inches of water; bring to boil over high heat. Reduce heat to low.
Place a heat proof mixing bowl over saucepan. Add oil to melt. Add chocolate and stir until melted.
Remove balls from the refrigerator. Hold a ball by the toothpick and dip into the chocolate, swirling to completely coat. Return to cupcake liner. Repeat with each ball. Chocolate will be left over!
Refrigerate for at least 1 hour, or until chocolate has hardened.
Store in airtight container in the refrigerator OR Freezer
